  • 2 garlic cloves, minced
  • 6 cups chicken broth

Instructions:

  1. In a large pot, sauté onions, carrots, and celery until softened.

  • 3 kaffir lime leaves
  • 3 slices galangal (or ginger)
  • 2 red chili peppers, sliced
  • 2 tbsp fish sauce
  • 1 tbsp lime juice
  • Fresh cilantro for garnish

Instructions:

  1. In a pot, combine coconut milk, chicken broth, lemongrass, kaffir lime leaves, and galangal. Bring to a simmer.
  2. Add chicken slices and cook until tender.
